The cook shared on Instagram a recipe for a delicious, healthy vegetable "Ratatouille" cooked in the oven.

Recipe of the dish

Ingredients:

  • tomatoes - 5-6 pcs.
  • zucchini - 1 medium
  • eggplant - 1 medium
  • bell pepper - 1 pc.
  • onion - 1 pc.
  • garlic - 3 cloves.
  • olive oil - 7-8 tbsp.
  • Provencal herbs
  • salt, pepper

Method of preparation:

1. Sauce: Peel the bell pepper and bake in the oven for 30-40 minutes at 190 C. Let it cool, peel, and cut into cubes. Pour boiling water over the tomatoes, peel and dice them as well. Peel and chop the onion in the same way. Fry everything, and season with salt and pepper.

2. Wash the remaining vegetables and cut them into 2 mm wide slices. Preferably, all vegetables should be the same diameter. If possible, choose a young zucchini to avoid peeling the skin. If the zucchini is old, it is better to peel the skin.

3. Put the sauce in the mold, then the chopped vegetables.

4. Mix the olive oil, chopped garlic and Provencal herbs, add salt, and pour the mixture over the vegetables.

5. Cover with foil and bake for 45 minutes at 190-200 C. Then remove the foil and bake for another 15 minutes.
