1. Liver and buckwheat filling
Ingredients:
- chicken liver (can be beef) - 300 g
- buckwheat groats - 1/2 cup
- onion - 1 pc.
- vegetable oil - 4 tbsp.
- salt - 1 tsp.
- pepper - a pinch
- sour cream - 3 tbsp.
Method of preparation:
- Wash the liver and cut off all the films, then cut it as small as possible.
- Peel the onion and cut it into small cubes.
- Pour vegetable oil into a hot frying pan and fry the liver and onions well for about 20 minutes.
- Boil the buckwheat and leave to cool.
- Put the cooked liver and the juice that formed during frying into a blender, add buckwheat, add a little salt, and pepper, and whisk until smooth.
- The filling is ready, you can start making dumplings.
2. Squid filling
Ingredients:
- squid meat - 700 g
- onion - 1 pc.
- egg - 1 pc.
- garlic - 2 cloves.
- olive oil - 2 tsp.
- salt - 1/2 tsp.
- soy sauce, pepper - to taste
Method of preparation:
- Wash the squid meat under cold water, and remove the films.
- Cut it and pass it through a meat grinder 2 times.
- Add the egg, chopped onion, salt, pepper, and soy sauce, mix well – and your filling is ready.
3. Seaweed and fish filling
Ingredients:
- any low-fat fish - 500 g
- seaweed - 300 g
- onion - 1 pc.
- salt, pepper - to taste
How to cook:
- Wash the fish, cut it into small pieces, and pass through a meat grinder or chop finely.
- Boil the seaweed, put it in a colander, and then pass it through a meat grinder.
- Combine the minced fish, seaweed, and onion in a bowl, season with pepper and salt, and mix thoroughly.
4. Mushroom filling
Ingredients:
- fresh mushrooms - 800 g
- onion - 2 pcs.
- oil - 4 tbsp.
- salt - 1 tsp.
Method of preparation:
- Wash the mushrooms and chop finely.
- Heat the pan well, pour in the oil, and fry the mushrooms until golden brown. At the very end, add the chopped onion and fry for about 10 minutes together with the mushrooms.
- Then add salt and pepper to the filling, cool it down, and you can make dumplings.
5. Black radish filling
Ingredients:
- black radish - 600 g
- onion - 1 pc.
- salt - 1/2 tsp.
Method of preparation:
- Peel, chop, and pass the onion and radish through a meat grinder.
- Be sure to squeeze out the excess juice.
- Transfer to a bowl, add salt, and stir well – the filling is ready.
