No-yeast Easter cake in 1 hour: you do not have to knead the dough for long
If you don't know how or don't like to work with yeast dough, this Easter cake recipe will be perfect for you. The incredibly fluffy, soft, and tender Easter cake without yeast will be ready in just one hour.
That's what food blogger Olha Riabenko says. On Instagram, she told us how to make a yeast-free Easter cake so that it turns out perfect.
Ingredients
- cottage cheese - 360 gr
- eggs - 4 pcs
- sugar - 200 gr
- melted butter - 200 g
- salt - ½ tsp
- flour - 400 g
- baking powder - 2 tsp.
- raisins - 250 g
- orange zest of 1.5 pcs of lemon
Ingredients for the icing (Swiss meringue)
- whites - 2 pcs
- sugar - 130 gr
- lemon juice - ½ tsp.
Method of preparation
1. Mix cottage cheese, eggs, sugar and salt. Beat with a blender and add butter, flour and baking powder. Knead the dough.
2. Rinse the raisins.
3. Add the zest of 1.5 oranges to the dough and mix well.
4. Fill the cake molds with dough by ⅔.
5. Bake at 180° for 1 hour.
6. Prepare the icing. Mix the whites with sugar and put them in a water bath. Stir constantly until the sugar is completely dissolved.
7. Remove from the bath, add the lemon juice and beat with a mixer until stiff peaks.
