Recipe for muffins with zucchini and cheese

Ingredients:

  • 1-2 zucchini (depending on size)
  • 200 g of flour
  • 1 packet of baking powder (16 g)
  • 3 eggs
  • 100 g grated cheese powder (you can use regular cheese)
  • 50 ml of olive oil (mild in taste)
  • 150 ml of milk
  • Pepper and salt to taste

Preparation:

First, rinse the zucchini well, grate it, and then let it drain.

Meanwhile, beat the eggs with milk and butter, seasoning with salt and pepper.

In addition, mix the cheese powder with flour and baking powder. Put it all into the egg mixture and mix well until you get a lump-free dough.

Add the grated zucchini.

Fill the muffin tins (pre-greased) 2/3 full with the batter and place in a preheated oven (about 180 °C) for about 25 minutes or until they turn brown.
