For the dough:

  • Milk - 600 ml
  • Fresh yeast - 55 grams (or 20-22 grams of dry yeast)
  • Sugar - 100 gr

For the dough:

  • Sugar - 230 gr
  • Eggs - 5 pcs
  • Flour - 1100 gr
  • Butter 82.5% - 300 gr
  • Raisins - 220 gr
  • Rum - 40 ml
  • Lemon zest - 1 pc

For the glaze:

  • Protein - 2 pcs
  • Hazelnuts - 80 gr
  • Sugar - 130 gr
  • Corn starch - 40 g

Method of preparation:

1. Rinse the raisins and soak them in alcohol overnight.

2. Add the sugar and yeast to the slightly warm milk and leave for 15 minutes to activate.

3. Add the eggs at room temperature and flour. Knead the dough for 5-7 minutes.

4. Add the lemon zest and a few slices of lemon, room temperature butter in several passes. The dough should be very soft.

5. Cover the dough with a towel and leave it in a warm place for 30 minutes.

6. Grease your hands and the table with oil, stretch the dough, add the raisins, and fold the dough several times, then divide it in half.

7. Leave the dough on the table for 30-40 minutes to rise, and then fold it again 4-6 times. Form a layer and place it in the mold.

8. Put the product in a warm place. The dough should triple in volume.

9. Bake in a preheated oven at 175 degrees for 10 minutes, and then reduce by 150 and another 40-45.

10. Prepare the fondant by mixing all the ingredients and cover the product with it.
