Ingredients
- Butter - 100 gr
- Sugar - 100 gr
- Eggs - 2 pcs
- Blanched ground almonds - 100 g
- Flour - 50 g
- Lemon (zest and juice) - 1 pc
- Powdered sugar - for dusting
1.Preheat the oven to 180°C. Grease a 19-cm-diameter baking dish and lightly flour it.
2. Melt the butter in a saucepan over low heat. Remove from heat and let cool.
3. In a bowl, whisk together the sugar and eggs until the mixture is pale and fluffy.
4. Slowly add the melted butter to the egg mixture and mix well.
5. In a separate bowl, combine the ground almonds, flour and finely grated lemon zest to enhance the flavor.
6. Gradually add the dry ingredients to the egg mixture and stir until just combined.
7. Squeeze the juice from the lemon and add it to the dough. Mix together until smooth.
8. Pour the batter into the prepared baking dish and smooth the top.
9. Bake for about 25-30 minutes, until the cake is golden brown and lightly baked on top but still moist in the center.
10. Remove the cake from the oven and let it cool slightly. Sprinkle with powdered sugar before serving.
