Moist berry and semolina cake: how to use wheat grits in a new way
Semolina cake is the simplest pastry that never disappoints. It is loved mostly because it is made from affordable ingredients that are always available in the kitchen. The dessert tastes very tender, moderately moist, and thanks to the filling in the form of various berries, it has a slight sourness.
Food blogger Yana (yanika.lazarenko) shared a recipe for delicious and moist bilberry, blueberry and semolina cake on her Instagram page.
Ingredients:
- semolina - 200 g
- 2.5% kefir - 320 ml
- eggs - 3 pcs
- sugar - 5 tbsp
- butter - 100 g
- flour - 100 g
- baking powder -1 tsp.
- berries - 100 g
- cornstarch - 1 tsp.
Method of preparation:
1. Pour kefir over semolina and leave for at least 1 hour to swell (according to this recipe, the semolina was infused for 3 hours).
2. After that, beat the eggs with sugar well until fluffy.
3. Add melted butter to the eggs. Beat again. Pour the resulting mass into the semolina.
4. Add flour and baking powder. Mix well.
5. Mix the berries with the starch separately.
6. Grease a baking dish with vegetable oil and sprinkle lightly with semolina. Pour one part of the dough, then berries, and then the rest of the dough.
7. Bake at 180 degrees for 40-45 minutes.
