Mexican-style pancakes: fried in breadcrumbs
In Ukraine, these pancakes are called nalysnyky. But Mexican-style pancakes are prepared in a slightly different way. The batter for the dish is thick and dense enough to hold the meat filling perfectly. Also, it is quite interesting that the wrapped pancakes are fried in breadcrumbs.
The idea of making Mexican-style pancakes was published on the Instagram page of food blogger Tetiana (tania_sheremet).
Ingredients:
- milk - 750 ml
- flour - 300 g
- eggs - 2 pcs
- oil - 2 tbsp
- sugar - 1 tbsp
- salt - 1/2 tsp
Ingredients for the filling:
- minced pork - 350 g
- corn - 300 g
- cheese - 100 g
- onion - 1 pc
- tomato sauce - 2-3 tbsp
- ground sweet paprika - 1 tsp
- salt and black pepper - to taste
Ingredients for breading:
- eggs - 2 pcs
- breadcrumbs - 100 g
Method of preparation:
1. For the batter, add eggs, sugar, and salt to a bowl and whisk a little. Add 300 ml of warm milk and flour and mix until smooth. Gradually pour the remaining milk and add oil.
2. Fry the pancakes on a preheated pan on both sides.
3. Prepare the filling: fry diced onion until golden brown. Add 350 g of minced meat and fry for 8-10 minutes until the meat changes color. Then add corn, ground paprika, black pepper, salt, and tomato sauce.
4. Put 1 tbsp of the filling on the pancake and grated cheese on top. Wrap it on both sides and roll it up.
5. Dip in egg, then in breadcrumbs.
6. Fry in vegetable oil in a preheated pan.
