If you love sausage but doubt its quality and safety, there is a way out – just cook it at home with quality products. Add some vegetables and the dish will be not only tasty but also healthy.

Cook and food blogger Olha Matvii shared a recipe for homemade chopped chicken and pork sausage on her YouTube channel, which will be tastier and definitely healthier than store-bought sausage (to watch the video, scroll to the end).

Meat for the roll

Ingredients:

  • Onions - 2 pcs.
  • Chicken thighs - 6 pcs.
  • Pork - 350 g
  • Salt - to taste
  • Bay leaf - 2 pcs.
  • Peppercorns - 7-10 pcs.
  • Pickled cucumbers - 5-6 pcs.
  • Garlic - 4 cloves.
  • Paprika - 1.5 tsp.
  • Broth - 350 ml
  • Gelatin - 10 g

Method of preparation:

  • Chop the meat and onion, add salt, pepper, bay leaf and peppercorns.
  • Pour boiling water over everything and cook until tender for an hour and a half, making sure to skim off the foam.
  • Then strain the broth through a colander, let it cool completely and chop the meat, add garlic, paprika, and salt, and mix well.
It is best to take two or three types of meat for the filling
  • Take the tin molds and place the baking bags tied at the bottom.
  • Peel and chop the cucumbers.
Pickles
  • Soak the gelatin, put it in 350 ml of broth, heat it well and pour it into the broth.
  • Then pour most of the broth into the meat.
Be sure to add broth when cooking
  • Put the meat, cucumbers, and meat again in the bottom of the molds, pour the broth over the meat, tie the bags well, and refrigerate overnight.
Ready meatloaf

The finished dish can be eaten with soup, salads, and will be delicious even with bread.
