Ingredients:

  • red pepper – 4 pcs
  • rice – 1 cup
  • water – 1/2 cup
  • olive oil – 1/4 cup
  • onion – 100 g
  • mushrooms – 100 g
  • zucchini – 1 pc
  • tomatoes – 1 pc
  • mozzarella cheese – 100 g
  • smoked bacon – 4 pcs
  • fresh basil – 1 tsp
  • dried oregano – 1/2 tsp
  • Parmesan cheese – 100 g
  • salt, pepper – to taste

Method of preparation:

1. Boil the rice until half cooked.

2. Peel the seeds from the peppers, cut off the tops, put them on a baking sheet, drizzle with olive oil, and bake in the oven for 25 minutes at 180 C.

3. Chop the mushrooms, onion, zucchini, and tomatoes, and fry the zucchini and tomatoes until tender.

4. Add the vegetables to the rice and stir.

5. Fry the mushrooms and onions and transfer to the rice, mix well, then add the chopped basil, nuts, and mix.

6. Cut the mozzarella cheese into cubes, add to the fried bacon, and mix well.

5. Stuff the peppers with the filling and sprinkle with grated Parmesan cheese.

6. Put in the oven for 15 minutes and serve.
