Meat terrine: what is this dish and how to cook it correctly
Meat terrine is a delicious appetizer based on several types of meat, vegetables, bacon, and dried apricots. You can add garlic, spices, and rosemary for a bright flavor. It is worth noting that the dish resembles a pate and a casserole in taste and structure at the same time.
Cook Valentyna Sayenko shared on Instagram a recipe for a delicious meat terrine with dried apricots and fried onions, which is very flavorful and satisfying.
Ingredients:
- Minced chicken - 300 g
- Minced pork - veal - 300 g
- Pistachios - 50 g
- Dried apricots - 50 g
- Onion - 1 pc.
- Rosemary - 1 sprig
- Garlic - 2 cloves.
- Egg - 1 pc.
- Thinly sliced bacon - 250 g
- Salt and pepper - to taste
Method of preparation:⠀
1. Finely chop the onion and fry until golden brown, add the rosemary sprigs a few minutes before the end.
2. Separately, mix the 2 types of minced meat, chopped dried apricots, chopped nuts, egg, finely chopped garlic, salt and pepper, and cooked onions, and mix.
3. Take a rectangular bread mold, cover with bacon, minced meat on top and another layer of bacon. Cover the dish with foil and bake for 1.5 hours at 170 in a water bath.
4. Allow to cool directly in the mold and preferably leave it in the refrigerator overnight to stabilize. To remove from the mold, run a knife around the edge and dip in warm water for a few minutes if you cannot remove the dish from the mold.
