Meat rolls according to an authentic recipe: what to add to the filling
Everyone's favorite hot dish, kruchenyky or Ukrainian meat rolls, is usually cooked with lard, prunes, or mushrooms. However, grandmothers' recipe was slightly different. The fact is that the basis of their kruchenyky was two types of meat, in which they wrapped onion filling. Quite an unusual, but extremely tasty combination, which is ideal for mashed potatoes, salads, sauces or as a hot appetizer for a festive table.
Food blogger Natalia (_natalia_tsvetkova) shared a recipe for meat rolls with onion on her Instagram page.
Ingredients:
- pork - 500 g
- beef - 500 g
- pepper - 1 tsp
- salt
- paprika - 1 tsp
- coriander - 1 tsp
- dried garlic - 1/3 tsp
- onion - 2-3 pcs
- broth/water - 500 ml
Method of preparation:
1. Cut the meat into pieces 5 mm wide. Beat off with a kitchen hammer on both sides.
2. Sprinkle with salt, pepper and spices on both sides.
3. Prepare the filling. Cut the onion into cubes and fry until golden brown.
4. Form the rolls. Put an overlapping piece of pork on a piece of beef.
5. Put the onion filling on one side and roll it up. You can secure the sides with a toothpick.
6. Fry the kruchenyky on both sides until golden brown, not until cooked.
7. Take out the toothpicks and put the rolls in a baking dish.
8. Pour broth or water over. Sprinkle with paprika and dry garlic if desired. Cover the baking dish with foil.
9. Bake at 180 degrees for about 1 hour.
