Who doesn't love airy, delicate, and flavorful marshmallows that just melt in your mouth? It's unlikely that there are any. But when it comes to cooking, the situation is different. Because most people are simply convinced that you need to stand at the stove all day to make marshmallows. Of course, it is not known where this statement came from. But, fortunately, it is completely wrong. And no matter what recipe you choose, marshmallows are guaranteed to be a success.

Berry marshmallows from Iryna Onyshkevych, the recipe of which she shared on her Youtube channel

Ingredients:

  • Apple puree - 100 g
  • Berry puree (black currant) - 25 g
  • Protein - 1 pc

For the syrup:

  • Sugar - 200 g
  • Glucose syrup (can be replaced with sugar) - 80 g
  • Water - 75 g
  • Agar-agar (gel strength 1200) - 8 g

Method of preparation:

  1. Put the applesauce in a bowl and add the protein. Beat with a mixer.
  2. Add berry puree and beat again.
  3. Pour water into a saucepan, add agar-agar, and mix.
  4. Add sugar and glucose syrup. Bring to a boil.
  5. Pour the resulting syrup in small portions into the berry puree, whisking the mixture with a mixer. Beat for several minutes until smooth.
  6. Transfer the mixture to a pastry bag and squeeze the marshmallows onto parchment. Leave it for 6-12 hours.
  7. Glue 2 marshmallow halves together and roll in powdered sugar.

Marshmallows with strawberries and cilantro from Yevhen Klopotenko, whose recipe he shared on his Youtube channel

Ingredients:

  • Egg white - 4 pcs.
  • Sugar - 80 g
  • Water - 150 ml
  • Agar-agar - 12 g
  • Sugar - 300 g
  • Honey - 100 g
  • Sprig of cilantro - 10 pcs
  • Strawberries - 250 g

For the sprinkles:

  • Powdered sugar - 1\2 tbsp.
  • Starch - 1 tbsp.

Method of preparation:

  1. Put the strawberries and cilantro in the bowl of a food processor, and beat until smooth.
  2. Combine water, agar-agar, and honey in a saucepan.
  3. Heat until thick, stirring constantly. The consistency should be similar to jelly.
  4. Add sugar and cook for another 2 minutes, stirring constantly.
  5. Add the strawberry and cilantro puree and cook over medium heat for another 5 minutes.
  6. Combine the egg whites and sugar in the bowl of a food processor. Beat until fluffy foam appears.
  7. Pour in the strawberry syrup. After all the syrup has been poured in, beat for another 2 minutes at high speed. The mass should increase in volume by 3 times.
  8. Very quickly transfer the mixture to a piping bag and add the marshmallows. This should be done as quickly as possible before the mass has time to stabilize.
  9. Let the marshmallows dry at room temperature for about 4 hours.
  10. Mix sugar and starch in a bowl and roll the marshmallow halves to absorb excess moisture.
