Marinated salad with baked vegetables: a recipe for a delicious and quick dish
Eggplant, onions, peppers, and carrots are very healthy and tasty vegetables that are ideal for making delicious salads and stews. They can also be baked in the oven or on the grill.
The cook shared a recipe for a delicious pickled salad of fried vegetables on Instagram.
Ingredients:
- Eggplant - 2 pcs.
- Pepper - 1 pc.
- Carrots - 1 pc.
- Onions - 1 pc.
- Parsley
- Salt, vegetable oil
- Garlic - 2-3 cloves.
- Cilantro
- Hot pepper
For the dressing:
- Wine vinegar - 1 tbsp.
- Water - 1 tbsp.
- Sugar - 1 tbsp
- Salt - a pinch
Method of preparation:
1. Cut the eggplant into slices, salt well to remove moisture and bitterness.
2. Slice the onion and pepper into strips and grate the carrots like in Korean, then quickly fry all the vegetables for just a few minutes. They must remain raw!
3. Put the eggplants on napkins to remove excess moisture. Fry on both sides.
4. Mix all the vegetables together, add garlic and herbs. And season with the marinade (you can also just mix everything). Put the finished salad in the refrigerator for two hours. Then take it out, mix it, and refrigerate for another two hours. After 4 hours, you can eat!
