Marinated champignons in an hour: a recipe for a spicy appetizer from Yevhen Klopotenko
Champignons are versatile mushrooms that can be cooked in a variety of ways and will be delicious. You can fry them with onions and meat, add them to soups, bake them on the grill, salt them, pickle them, add them to salads, and even eat them raw.
The chef Yevhen Klopotenko shared a recipe for delicious pickled champignons on his website, which are very quick to prepare.
Ingredients:
- champignons – 400 g
- water – 500 ml
- sugar – 1 tsp
- apple cider vinegar – 6 tbsp
- bay leaf – 2 pcs
- allspice – 5 pcs
- dill – 5 sprigs
- mustard – 0.5 tsp
- garlic – 2-3 cloves
- onion – 1/2 pc
- salt – 2 tsp
Method of preparation:
1. Wipe the mushrooms from dirt with a paper towel or damp cloth.
2. Cut off any damaged areas of the stem and put the mushrooms in a jar or a convenient glass dish.
3. Cut the onion into half rings and crush 2-3 cloves of garlic with a knife blade.
4. Marinade: pour 0.5 water into a saucepan, add salt, sugar, spices, bay leaf, garlic, mustard, black, and allspice.
5. Put the saucepan on the fire and bring to a boil, then cook for another 5 minutes to dissolve the sugar and salt and release the spices' flavors.
6. Remove the saucepan from the heat and then add the vinegar.
7. Wash and chop the dill and sprinkle it over the mushrooms.
8. Then pour the marinade over the mushrooms so that they are completely covered.
9. Be sure to cover them with a lid and set aside until they cool completely.
Then you can serve the finished mushrooms immediately to the table, seasoning them with butter.
