Mamalyga made of corn grits, with meat and cheese: a recipe for a hearty dish

Mamalyga is a traditional Moldovan and Romanian dish based on corn grits. It is best served with cheese and fried meat.
The cook shared on Instagram a recipe for delicious mamalyga made from corn grits and cheese.
Ingredients:
- Corn grits - 200 g
- Water - 600 ml
- Salt - a pinch
- Butter - a pinch
- Meat (I have pork) - 400 g
- Onion - 1 pc
- Bulgarian (or Kapi) pepper - 1 pc.
- Salt, pepper - to taste
- Water - 50-100 ml
- Oil - for frying
- Egg - 2 pcs.
- Butter (or oil)
- Sour cream - optional
- Salt - optional
- Garlic - 4-5 cloves.
- Salt - 0.5 tsp.
- Oil - 1 tbsp.
- Broth or water - 2 tbsp.
- Cheese (hard and salted)
- Sour cream
Method of preparation:
1. Pour water into a cauldron (or non-stick saucepan), add salt and when the water almost boils, reduce the heat to a minimum and slowly, stirring constantly, pour in the corn grits.
2. When the porridge thickens slightly, add the butter and continue stirring. Cover the pot with a lid for 20-25 minutes, but open it every 5 minutes and stir the porridge.
3. Then turn off the heat and leave the corn porridge to brew (if you have cereal that is not finely ground, you will need a little more water and cooking time).
4. Cut a piece of belly into cubes, fry until golden brown, then add onion, pepper, salt, mix, add a little water and simmer until tender.
5. Fry the eggs in butter and add a little sour cream if desired.
6. The last ingredient is the Moldovan sauce "Mujov". Chop the garlic, grind it a little with salt, then add the oil, broth (or water), and mix well. Grate the cheese.
Serve all the components of the dish in separate dishes - corn porridge, cheese, scrambled eggs, meat, garlic sauce and sour cream!
