Lviv syrnyk with an unexpected ingredient: an authentic recipe
Lviv syrnyk has long been one of Ukraine's favorite desserts. Its peculiarity lies in the fact that the popular delicacy is made with the simplest ingredients. At the same time, the syrnyk itself has a perfect creamy texture, holds its shape well and does not crumble.
The famous Lviv syrnyk was created by the popular Ukrainian confectioner of the 20th century Daria Tsvek. Her recipe is special because it calls for adding raw potatoes to the dessert, which makes the texture more perfect and the taste richer.

Ingredients:
- cottage cheese - 600 g
- butter - 100 g
- eggs - 4 pcs
- sugar - 150 g
- boiled potatoes - 1 pc
- lemon zest - 1 tbsp
- baking powder - 1 tsp
- raisins or cherries (in this recipe, it is cherries) - 150 g
- vanilla sugar
Glaze:
- dark chocolate
- milk
- cream
Method of preparation:
1. Pour boiling water over the dried fruit for 10-15 minutes or leave it overnight in alcohol or orange juice.
2. Rub the cottage cheese through a sieve.
3. Grate the potatoes on a fine grater and add to the cheese.
4. Next, add the egg yolks and mix well.
5. Add sugar, vanilla sugar, and baking powder. Mix well.
6. Add soft butter, lemon zest and dried fruit.
7. Beat the whites separately with a pinch of salt until stiff peaks. Gradually add the resulting mass to the cottage cheese.
8. Cover the form with parchment. Pour the curd mass into it.
9. Bake at 180 degrees for 1-1.5 hours.
10. Cool and remove from the mold.
11. For the glaze, melt the chocolate in a water bath and then add milk and cream.
12. Pour the glaze over the syrnyk.
