Lviv syrnyk is an exquisite traditional holiday dessert in Ukraine. It is served in the best restaurants of the country, and tourists travel hundreds of kilometers to try this dish. However, it is also possible to make it at home - you just need to know a few tricks.

Ingredients for the base:

  • cottage cheese with a fat content of at least 5% - 750 g
  • eggs - 5 pcs (6 if small)
  • sugar - 150 g
  • melted butter - 150 g
  • lemon - 1 pc
  • lemon juice - 0.5 pcs
  • cream thickener - 12 g or 3 sachets

Ingredients for the glaze:

  • butter - 30 g
  • sugar - 2 tbsp
  • fat sour cream - 3 cups
  • 20-22% cocoa - 2 tbsp

Method of preparation:

1. Beat the cottage cheese in a blender. It should turns into thick cream.

2. Separate the yolks from the whites. Beat the yolks with sugar until white.

3. Make zest and squeeze lemon juice.

4. Gradually mix the cottage cheese, yolks, butter, and lemon zest and juice.

5. Beat the whites until thick foam.

6. Add the thickener to the main mass and finally add the whites.

7. Cover the mold with parchment and grease it with oil.

8. Bake at 180 degrees for 40-50 minutes.

Making the glaze.

Glaze:

1. Heat the butter over low heat.

2. Add 2 tbsp of sugar.

3. Cook over low heat.

4. When the butter is almost dissolved, gradually add sour cream.

5. Add cocoa and bring the mass to a boil, stirring constantly.

6. Cover the syrnyk with it.

A few tips to make the dish perfect:

1. Choose cottage cheese that is neither wet nor dry and of high fat content.

2. The shorter and taller the mold, the longer it takes to bake.

3. If the mold is small, then you need to reduce the amount of ingredients by a third - 500 g of cottage cheese, 4 eggs, 100 g of sugar, 2 sachets of thickener, a small lemon, and 100 g of butter. Keep the same proportions for the glaze.
