Lviv cheesecake: three ways to make it at home

Lviv cheesecake is a dessert without which it is hard to imagine coffee shops in Lviv. Locals proudly say that the authentic recipe is centuries old, but at the same time no one knows which of the existing variants is original. Today FoodOboz editorial staff shares three variations of making Lviv cheesecake at home.

History of the recipe

For the first time published the recipe of Lviv cheesecake legendary Ukrainian and talented cook Darya Tsvek in her book "Sweet Cookies". Since childhood, the girl wrote down the recipes of her mother and grandmother, and as an adult, she began to cook and invent her own dishes.

Cheesecake with poppyseed

Ingredients:

  • Sugar - 250 g
  • Butter - 180 g
  • Mac - 100 g
  • semolina - 1 tbsp
  • Starch - 1 tbsp
  • Raisins - 100 g
  • Lemon - 1 pc
  • Vanilla sugar - to taste
  • Chocolate or powdered sugar for decoration

Method of preparation:

  1. Steam seeds in boiling water, drain excess liquid, grind.
  2. Grate cheese with sugar. Beat eggs without separating whites and yolks and add to cottage cheese mixture.
  3. Pour in semolina, starch, vanilla sugar. Stir. Add butter, lemon zest and mix again until homogeneous.
  4. Put a few spoonfuls of the curd mixture into the poppyseed mixture and stir. Add the mixture to the whole cheese mixture and mix thoroughly.
  5. Divide the curd mixture in half. Place half of it in a greased mold. To the second half add the raisins scalded with boiling water, mix and place on top of the mold.
  6. Bake for 55-60 minutes at 180ºC.
  7. After cooling, pour melted chocolate over the cheesecake or sprinkle with powdered sugar.

Cheesecake with apples

Ingredients for the dough:

  • Flour - 240 g
  • Margarine - 100 g
  • Sour cream - 1 tbsp.
  • Baking powder - 1 tsp.
  • Egg yolks - 2 pcs.
  • Sugar - 100 g
  • Apples - 1 kg,
  • Cinnamon - 1 tsp.

Ingredients for cottage cheese filling:

  • Cheese - 1 kg
  • Butter - 100 g
  • Sugar - 200 g
  • Eggs - 2 pcs.
  • Egg whites - 2 pcs.
  • semolina - 50 g
  • Salt
  • Vanilla
  • Leavening agent for dough -1 tsp.

Method of preparation:

  1. Mix soft margarine, egg yolks and sour cream. Add sugar, baking powder and flour. Stir until homogeneous.
  2. Separate yolks and whites of 2 eggs. Rub the yolks with sugar, whisk the whites to stiff peaks.
  3. Beat the cottage cheese with a blender. Add 2 eggs, butter, baking powder, semolina, salt and vanilla. Stir until smooth. Using a spoon, gently stir the whipped whites into the mixture.
  4. Peel, grate or thinly slice the apples.
  5. Line a mold with parchment and grease with oil. Place the dough on the bottom of the mold, on it - apples, and on top - cheese mixture. You can decorate with apple slices on top.
  6. Bake for 1 hour at 180 degrees. After cooking, leave it in the turned off oven until it cools down completely, so that the puffy cheesecake does not fall.

Ingredients:

  • Cheese - 1 kg
  • Eggs - 8
  • Sugar - 250 g
  • Starch - 2 tbsp
  • Milk - 200 g
  • Lemon zest

Ingredients for chocolate dough:

  • Eggs - 2 pcs
  • Sugar - 150 g
  • Butter - 150 g
  • Flour - 300 g
  • Cocoa powder - 30 g
  • Baking powder - 1 tsp

Method of preparation:

  1. Crack eggs with sugar. Add butter at room temperature, stir.
  2. Combine flour, cocoa, baking powder. Add to the egg and butter mixture. Knead the dough. Wrap in cling film and put in the freezer for 20 minutes.
  3. Separate the whites and yolks of 8 eggs. Mash the yolks with the sugar. Add lemon zest.
  4. Add the cheese and beat the mixture until smooth.
  5. Whip the egg whites to stiff peaks. Gently, using a spoon, stir into the cottage cheese mixture.
  6. Add the starch, pour in the milk. Stir until homogeneous.
  7. Grease the mold with butter.
  8. Divide the chocolate dough into 2 halves. Grate one half on a coarse grater on the bottom of the mold, flatten with a fork.
  9. Place the cottage cheese mixture on the dough. Top with the second half of the chocolate dough.
  10. Bake at 180 degrees for one hour. After turning off the heat, keep in the oven for another 30-40 minutes to cool down. Finished cheesecake before serving decorate with powdered sugar.
