Luxurious sponge cake tiramisu roll: how to make a popular dessert in a new way
There are hardly any people who haven't had the famous tiramisu, a favorite dessert with a bitter coffee flavor and delicate creamy cream. The classic version is made with savoyardi cookies. Some recipes use puff pastry instead of this ingredient.
There's also another idea – a roll-shaped tiramisu dessert. This recipe changes the base to a flaky sponge cake, and the presentation is more luxurious and impressive.
Food blogger Olena Obukhova shared her recipe for a tiramisu roll. It was posted on Instagram.
Ingredients:
- eggs - 4 pcs.
- sugar - 120 g
- flour - 120 g
- salt
For the cream:
- mascarpone cheese - 500 g
- cream 33-35% - 150-250 ml
- powdered sugar - 80 g
- dark chocolate - 50 g
For the impregnation:
- iced coffee - 200 ml
Method of preparation:
1. Preparation of the sponge cake. Separate the whites from the yolks in the eggs.
2. Beat the whites with salt until stiff. Gradually add sugar and beat until smooth.
3. Gradually add the yolks while continuing to beat.
4. Gradually add the flour and mix with a spoon.
5. Put the dough on a baking sheet and bake at 200 degrees for 10-12 minutes. Turn the hot sponge cake over to the other side and place it on a towel, and after 10 minutes roll it up with the towel. Leave it for several hours.
6. Preparation of the impregnation. Brew coffee: 200 ml of water and 2 tsp of sugar for 1.5 tsp of coffee. Cool.
7. Prepare the cream. Mix the mascarpone until smooth.
8. Whip the cold cream until fluffy.
9. Add the powder to the cream.
10. Gradually add the resulting mass to the mascarpone and mix with a spoon.
11. Form the roll. Soak the sponge cake evenly and sprinkle with chocolate chips.
12. Put some of the cream and wrap it in the roll. Put in the refrigerator for 1 hour.
13. Decorate the roll with the rest of the cream and sprinkle with cocoa.
