Lush Berliner donuts with a filling: pastries just melt in your mouth

Probably, everyone has tasted the famous Berliners at least once in their lives – extremely fluffy, soft, and airy donuts with a filling. Such a delicacy will perfectly fit into a cup of cocoa and will make home gatherings even more cozy.
Food blogger Valeria (yummy.lera) shared a recipe for the famous Berliner donuts with raspberry filling on her Instagram page.
Ingredients:
- warm milk - 125 ml
- dry yeast - 6 g
- sugar - 50 g
- sifted flour - 215 g
- egg yolk - 1 pc
- salt - a pinch
- vanilla sugar - 10 g
- butter - 25 g
Filling:
- raspberries - 200 g
- sugar - 50 g
- corn starch - 10 g
- water - 35 ml
- lemon juice - 1 tbsp.
Method of preparation:
1. Mix warm milk, yeast, 1/3 of the sugar, and 1/3 of the flour until thick. Cover with cling film and leave for 15-20 minutes.
2. Mix the yolk with the rest of the sugar, salt, and vanilla sugar. Add the prepared dough and mix well.
3. Gradually add the remaining flour and knead a soft elastic dough. Knead it for about 10-15 minutes. Cover the dough with plastic wrap and leave it warm for 1-1.5 hours.
4. After that, knead the dough, roll it out to a thickness of 1.5 centimeters, and cut out circles 7-8 centimeters in diameter. Put the circles on a floured surface, cover with cling film, and leave for 10-15 minutes.
5. Fry the donuts in a large amount of oil on both sides. Put them on a paper towel and let them cool.
6. Next, prepare the filling. To do this, put the raspberries and sugar on the fire and bring to a boil.
7. Add starch with water and lemon juice. Cook until thickened. Then remove from heat and cool.
8. Fill the donuts with the filling.
