Lush and moist "Santiago" pie: no wheat flour or oil in the recipe
The "Santiago" almond cake is a famous Spanish pastry that does not contain classic wheat flour and oil. It is budget-friendly and easy to prepare, and it turns out to be very fluffy and aromatic thanks to the citrus zest.
The recipe for "Santiago" almond cake, which does not contain wheat flour and oil, was published on one of the cooking channels (Liuda Easy Cook Ukrainian Chef) on YouTube.
Ingredients:
- eggs – 4 pcs
- sugar – 225 g
- salt – a pinch
- vanilla extract – 1 tsp
- zest of 1 lemon
- zest of 1 orange
- almond flour – 250 g
- powdered sugar (for decoration)
Method of preparation:
1. Beat eggs with sugar and salt until fluffy.
2. Then add lemon and orange zest and vanilla extract. Mix well.
3. Add the flour. Mix until smooth.
4. Pour the batter into the lined mold (bottom and sides) with parchment. Bake at 180 degrees for 30-40 minutes.
An interesting fact: the decor in the form of a cross, called the "Santiago Cross", makes this dessert recognizable. To do this, you can cut out a special stencil in the shape of a cross and decorate the cake with powdered sugar.
