Ingredients:
- sour apple variety - 350 g
- apple puree - 130 g
- currant puree - 100 g
- sugar - 150 g
- protein - 30 g
- water - 60 ml
- sugar - 200 g
- agar-agar - 10 g
Method of preparation:
1. For the puree: peel and seed the apples, cut them into small pieces, microwave them, and bake them.
2. Afterwards, blend with an immersion blender until smooth, rub well through a sieve, and refrigerate overnight.
3. Mix the prepared mashed potatoes with sugar, mix well to lighten the mass, and increase in volume.
4. Then add the egg white and whisk well again until smooth.
5. Put the berry puree in a saucepan, add agar-agar and water, mix and put on the stove, cook until 104°C.
6. Pour the finished syrup into the apple-protein mixture and continue whisking; the mixture should hold its shape well and be at least 40°C.
7. Put the finished mixture into a pastry bag and drop the marshmallows in.
8. Be sure to let it sit for about 6-10 hours at room temperature to stabilize.
9. Then sprinkle the finished dessert with powdered sugar - and you can eat.
