It's a simple trick and there are several reasons why it works

When rising bubbles collide with a wooden spoon, the surface tension of the bubbles is broken, causing them to burst and disperse back into the liquid. The temperature difference between the cool wooden surface and the hot bubbles can also cause the bubbles to curdle, lowering the top of the foam.

In addition, the wooden spoon acts as a physical barrier, preventing the bubbles from reaching the edge of the pan and spilling over. The absorbent properties of wood can also play a small role, taking some of the moisture from the bubbles.

While this lifehack may help, it's not infallible, so keep a close eye on the pot. Whether it will work depends on the size of the pan, the amount of water, and the amount of heat you're using. If it's on high heat and the bubbles rise quickly, the spoon can also get hot, causing the bubbles to boil over and overflow the pot.
