Light summer Olivier with an unusual ingredient: turn out very tasty and bright
One of the simplest and most delicious salads is Olivier, which is prepared differently depending on the season. For example, in winter, it is made with meat, pickles, and potatoes, and in spring and summer, it is much lighter: with seafood, fish, fresh cucumbers, and a light sauce.

Ingredients:
- boiled potatoes - 4-5 pcs.
- pickled cucumbers - 2 pcs.
- fresh cucumbers - 1 pc.
- boiled carrots - 1 pc.
- green onions - 30 g
- frozen squid - 300-400 g
- canned peas - 2/3 of a can
- salt - to taste
- mayonnaise or yogurt - 2-3 tbsp.
Method of preparation
1. Peel and dice the boiled potatoes and carrots.
2. Dice the cucumbers and chop the onion into small cubes.
3. Boil the squid: bring the water to a boil and cook 1-2 rings.
Immerse in salt water for 40-45 seconds, wait for the water to boil again, and immerse the next rings.
4. Chop them, add to the salad and season with mayonnaise. Add peas, green onions, salt, and pepper and mix thoroughly.
