Light seasonal salad with pumpkin and cheese: an original recipe from the chef

Pumpkin, cheese, and citrus notes - this is the variety of flavors you can experience when making a delicious autumn salad. It is original, bright, has a rich sweet and sour taste and fresh aroma.

Famous Ukrainian chef Taras Klipin shared a recipe for an autumn salad with pumpkin on his YouTube channel.

Ingredients:

  • pumpkin - 100 g
  • chili pepper - 5 g
  • orange - 150 g
  • butter - 10 g
  • sugar - 10 g
  • salt - 3 g
  • cherry tomatoes - 50 g
  • onion - 20 g
  • salad mix - 70 g
  • cheese or feta cheese - 50 g
  • olive oil - 20 ml
  • mustard - 10 g

Method of preparation:

1. Peel and core the pumpkin. Cut it in any way, but do not cut it into thin pieces so that it does not fall apart and caramelizes well.

2. Cut the orange zest into strips.

3. Heat a frying pan, add butter, sugar, and zest to the surface.

4. Add chili pepper and pumpkin at the same time. When the pumpkin has a light golden color, squeeze in the orange juice. Cook, stirring occasionally, until the pumpkin is tender.

5. For the dressing, mix olive oil, mustard, a little orange juice, and a spoonful of caramel from the pan. Add salt and mix.

6. Chop the tomatoes and onions.

7. Put the tomatoes and lettuce into the dressing. Mix with your hands.

8. Put the tomatoes in the dressing, lettuce, onions, cooked pumpkin, and cheese on a plate. Drizzle with orange juice.
