Light and refreshing Watermelon cake: how to recreate the original design
Even in the summer, people may want to try a delicious dessert. However, on very hot days, you want it to not only bring gastronomic pleasure, but also refresh you. You can also use your imagination and cook something very unusual.
For example, food blogger Valeria Veliugina showed on her Instagram what she cooks when she has a sweet tooth in the summer. The blogger posted a recipe for a Watermelon cake that is not only delicious but also looks attractive.
Ingredients for a sponge cake for ad18 cmmold
- Spinach - 100 gr
- Eggs - 2 pcs
- Flour - 35 g
- Baking powder - ½ tsp
- Lemon zest
- Salt - a pinch
- Sugar - 50 g
Ingredients for the filling
- Gelatin - 10 grams
- Milk - 50 ml
- Cottage cheese - 150 g
- Natural yogurt - 150 g
- Powdered sugar - 100 g
- Vanilla sugar - 1 pack
- Cream 33% - 300 ml
Ingredients for jelly
- Jelly "Wild berries" - 1 pack
- Water - 300 ml
- Blueberries - a handful
How to make the sponge cake
1.Pour boiling water over the spinach for 3 minutes.
2. Drain and squeeze well. Let it cool down.
3. Add the egg yolks and blend until smooth.
4. Add the sifted flour, baking powder, lemon zest and mix.
5. Beat the egg whites with salt with a mixer until foamy and continue to beat, add sugar. Beat until peaks form.
6. In 3 stages, add to the dough, gently mixing with a spatula from the bottom up.
7. Pour onto a baking sheet with parchment and bake in a preheated 180 degree oven for 15 minutes.
8. Let it cool completely and cut out an 18-cm-diameter cake.
How to prepare the filling
- Combine gelatin with milk and leave for 10 minutes.
- Separately, combine the cottage cheese, yogurt, melted gelatin, half the powdered sugar, vanilla sugar, and beat with a blender.
- Add the rest of the powdered sugar to the cold cream and beat until thickened.
- Combine the cream with the main mass and pour into a mold covered with acetate film on top of the sponge cake.
- Put it in the fridge for 3-4 hours.
How to make jelly
1. Pour the jelly into hot water, mix thoroughly and let it cool.
2. Pour 1/3 of the jelly into the mold on top of the filling and add blueberries. Put in the refrigerator for 15-20 minutes.
3. Pour the rest of the jelly and put in the refrigerator until it hardens completely.
