The cook shared on Instagram a recipe for a very easy-to-prepare, tasty and satisfying eggplant salad with onions and tomatoes.
Ingredients:
- Tomatoes - 2-3 pcs.
- Eggplant - 2 pieces
- Crimean onion - 0.5 pcs.
- Cilantro - more
- Corn starch - more
- Lemon juice - 1 tsp.
- Sesame seeds for sprinkling
- For the oil
- Sweet chili sauce - 50 g
- Soy sauce - 20 g
- Cream cheese - 100 g
Method of preparation:
1. Peel the eggplant and cut into large pieces along with the tomatoes.
2. Thinly slice the onion.
3. Sprinkle the eggplants with starch to coat them well and fry in plenty of oil over high heat. After frying, remove a little oil with a paper towel.
4. For the sauce: mix sweet chili, soy and lemon juice.
5. Season the tomatoes and sauce with onion and top with fried eggplant and more tomatoes in sauce. It is better not to stir the salad to keep the eggplant crispy. Sprinkle generously with cilantro, sesame seeds and add cream cheese!
