For the base:

  • unleavened puff pastry - 2 pcs.

Ingredients for the custard:

  • milk - 1 liter
  • eggs - 4 pcs
  • sugar - 250 g
  • flour - 70 g
  • butter - 70 g
  • vanilla or orange / lemon zest - optional for flavor

1. Heat milk in a saucepan, bring to a boil and remove from heat

2. Separately, mix eggs, sugar and sifted flour in a bowl, stir with a whisk to avoid lumps, you can also use a mixer.

3. Pour the mixture into the hot milk, stirring constantly with a whisk.

4. Put the saucepan on medium heat.

5. Heat the mass constantly stirring, it will begin to thicken, cook until the consistency of cream for about 3-5 minutes.

6. The most difficult step is here - you will think that the cream is liquid, do not stop stirring, it can quickly set and burn. Stir with a whisk and do not forget about the bottom and edges. If the mass does not become thick, increase the heat.

7. As soon as it thickens, immediately remove from the heat, add the butter, and stir until the butter dissolves.

8. Cut the dough into squares and bake at 180 degrees for 15-20 minutes until golden brown, then divide into layers when it cools slightly. Leave some for sprinkling.

9. Mix the dough with the cream, put it into the mold, and smooth it with a spatula. Rub the remaining dough in your hands and sprinkle on top.
