Lana Fore, a nutrition expert, shared a recipe for a healthy snack on her website – pumpkin and tomato bruschetta – that everyone will love.
Ingredients:
- pumpkin - 300 g
- bread - 8 pieces
- tomatoes - 2-3 pcs.
- onions - 1/2 pc.
- Parmesan cheese - 30 g
- olive oil - 2 tbsp
- balsamic vinegar - to taste
- basil - 30 g
- rosemary - 1 sprig
- garlic - 1 clove
- ground black pepper - to taste
- pumpkin seeds - 1 tbsp.
Method of preparation:
- Rub the bread well with garlic and lightly brush with olive oil, put it on a baking sheet and put it in the oven for a few minutes to toast.
- Mix the balsamic vinegar with salt and olive oil.
- Chop the tomatoes, drizzle with olive oil, add salt and vinegar, and set aside to marinate. You can also add onions and basil.
- Cut the pumpkin into slices, put it in a preheated pan with oil, add rosemary, stir and simmer until tender.
- Drizzle the cooked pumpkin with balsamic vinegar and sprinkle with salt.
- Put the tomatoes and pumpkin on the bread, pepper and sprinkle with Parmesan cheese or pumpkin seeds.
It is best to eat them hot.
