Koltsunash: how to cook a delicious traditional Moldovan dish

Koltsunash are delicious Moldovan dumplings with brynza, the base of which is thin dough in water and the filling is brynza. To serve, be sure to use herbs and butter. The peculiarity of the dish is that the dumplings are triangular in shape.

Ingredients:
For the dough:
- Egg - 2 pcs.
- Water - 50 ml
- Oil - 1 tbsp.
- Salt - a pinch
- Flour - 300 g (+ flour for dusting)
For the filling:
- Cheese - 150 g
- Egg - 1 pc.
Method of preparation:
1. Mix two eggs, salt, a little water and oil, shake well and pour into the flour.
2. Knead the dough thoroughly until it has absorbed all the flour, then cover with a damp towel/cling film and set aside.
3. For the filling: mix the salted cheese, add one egg, and mix.
4. Divide the dough in half for convenience, sprinkle the surface with flour and roll out the dough as thin as possible. Use a knife to cut it into equal small squares.
5. Put a little filling in the center of the square, fold it in half and carefully pinch the edges.
6. Bring the water to a boil, put the dumplings in, and cook for 3-4 minutes.
To serve: melt the butter, add finely chopped herbs, mix, and turn off the stove. Serve the finished koltsunash with butter and herbs, sour cream or caramelized onions!
