Kefir and water: the perfect lean dough for dumplings according to the recipe of Hector Jimenez-Bravo
If you want to make a delicious but lean dough for dumplings, it is best to make it with water, but you can also use 1% kefir. The filling should be lean accordingly, it can be stewed cabbage, berries, or fruit.
Chef Hector Jimenez-Bravo shared on Facebook a recipe for the perfect dough for dumplings, which can be made with both water and kefir.
1. Water-based dough
Ingredients:
- flour - 2 cups
- water - 3/4 cup
- eggs - 1 pc.
- salt - a pinch
Method of preparation:
1. Heat the water.
2. Sift the flour, add water, salt, egg and mix very thoroughly until smooth.
3. Put the finished dough into a bowl and cover with a damp towel for 40 minutes to allow the dough to rise.
2. Kefir dough
Ingredients:
- flour - 5 cups
- kefir - 0.5 liters
- eggs - 1 pc.
- sugar - 1 tbsp
- salt - a pinch
- baking soda - 1 tsp.
Method of preparation:
1. Beat the egg with sugar.
2. Sift the flour and add to the egg mixture.
3. Then add salt and baking soda.
4. Make a well in the flour and pour in the kefir, mix very thoroughly to make the dough elastic.
5. Put it in a bowl, cover it with a towel, and leave for 40 minutes.
