Juicy homemade cold boiled pork: what to add to the marinade

In Ukraine, meat is one of the most important products on the festive table. However, the dish often turns out to be a bit too dry. Therefore, for perfect flavor and softness, you need to use the right marinade.

Ingredients:

  • pork - 1 kg (steak)
  • salt - 2 tsp
  • water

Ingredients for the marinade:

  • salt - 1 tsp
  • ground black pepper - 1/2 tsp
  • paprika - 1/2 tsp
  • grain mustard - 2 tbsp
  • honey - 50 g
  • soy sauce - 50 ml
  • dry garlic
  • other spices as desired

Method of preparation:

1. Rinse the meat well.

2. Pierce it through with a wooden skewer in several places.

3. Place in a bowl, cover with water and salt, and leave in the refrigerator overnight.

4. Drain the water and dry the meat with a paper towel.

5. Mix everything for the marinade, rub the meat and place it in a baking dish (with the fat layer to the bottom) and leave it in the refrigerator for at least a day.

6. Cover the pan with a lid or foil, add 50-100 ml of water and bake at 180 degrees for 1.5-2 hours, basting every 30 minutes with the juice that is released.

7. Cool and serve sliced.
