Juicy fish cutlets: we tell you what kind of fish to cook with
Fish cutlets are an ideal alternative to meat cakes. They are very simple and quick to prepare. It is best to cook them from hake, catfish, and pike, because the cutlets will not fall apart.
The cook shared a recipe on Instagram for juicy, tasty, and flavorful fish cutlets, namely pike.
Ingredients:
- Pike fillet – 600 g
- Onion – 1 pc (or shallots 5-6 pcs.)
- Egg – 1 pc.
- White bread – 120 g
- Milk – 120 ml
- Lard – 60 g
- Salt
- Lemon pepper for fish – 1-2 tsp.
- Honey – 1 tsp (it removes the smell of fish and is not felt in the cutlets)
- Dill – 40 g
- Breadcrumbs or oatmeal (if the dough is liquid or sticky) – 60 g
Sauce:
- Yogurt or sour cream – 2 tbsp.
- Red horseradish – 1 tbsp.
- Dill – 1 tsp.
Method of preparation:
1. Peel the pike from the skin and bones and cut it into small pieces.
2. Pour the bread pulp with milk for 2 minutes, and then squeeze the liquid well.
3. Blend the onion with the egg in a blender until smooth, add the fish, lard, spices, honey, and soaked bread, blend again, then add the chopped dill and knead the minced meat. If the minced meat turns out to be liquid or sticks to your hands, add breadcrumbs or oatmeal and let stand for 15 minutes.
4. Form the cutlets with wet hands and place them in a preheated frying pan, fry until golden brown on all sides.
Serve with horseradish, sour cream, and dill sauce.
