Juicy cabbage dumplings: recipe for lush and soft dough that doesn't fall apart
The perfect dumplings are soft, fluffy and do not stick when cooked. The most important thing is to prepare a successful dough and choose your favorite filling: cabbage, meat, mushrooms, liver, cherries, blueberries or cottage cheese.
One of the culinary blogs(nekuhar) on Instagram published a recipe for juicy cabbage dumplings based on a universal custard dough.
Ingredients:
Filling:
- cabbage - 1 pc
- onion - 1 pc
- carrots - 1 pc
- sauerkraut
- oil
- salt
- sugar
Dough:
- flour - 3 tbsp. with a slide
- boiling water - 1 tbsp.
- eggs - 2 pcs
- sunflower oil - 3 tsp.
- salt - 1 tsp.
- + onion - 1 pc (for frying)
Method of preparation:
1. To prepare the dough, dissolve salt and vegetable oil in boiling water. Pour 1 tbsp. sifted flour, make a dough.
2. Add beaten eggs and gradually add the remaining flour. Knead an elastic dough that does not stick to your hands. Form the dough into a ball, cover with clingfilm and leave for 30-60 minutes.
3. To prepare the filling, chop and lightly fry the onion.
4. Grate carrots and add to the onions along with fresh and sauerkraut. Add salt and sugar.
5. Roll out the dough and cut out circles. Form the dumplings with the filling.
6. Boil the dumplings in salted boiling water for 4-5 minutes after they float to the top.
7. To prepare the frying mixture, chop and fry onions in sunflower oil until golden. Serve with ready-made dumplings.
