Instead of bread and cereal: zucchini pancakes for lunch according to a nutritionist's recipe
Zucchini pancakes are the easiest summer dish to prepare, based on healthy zucchini, eggs, flour, and spices. They take no more than 10 minutes to prepare and are delicious both hot and cold with different sauces.
Nutritionist Olha Usenko shared on Instagram a recipe for delicious zucchini pancakes made with whole wheat flour, which will be a great alternative to bread and even cereal.
"This is a good option for replacing bread in the morning or porridge. It's very convenient to put lightly salted salmon or cottage cheese on top and eat it for breakfast," Olha said.
Ingredients:
- zucchini - 1 pc.
- eggs - 5 pcs.
- whole wheat flour - 4-5 tbsp.
- oil for frying - 1-2 tbsp.
- salt, pepper - to taste
Method of preparation:
1. Grate the zucchini.
2. Add eggs and flour and mix.
3. Season with salt and pepper and mix again.
4. Heat a frying pan and fry the pancakes.
