Incredible pides: cooking Turkish boats with meat and vegetables
Pide is a dish made in the form of boats with a wide variety of fillings, which is also often called "Turkish pizza". It can be prepared with any filling, but meat and vegetables are most often used.
A food blogger with the nickname tania_sheremet_ knows how to cook pide correctly. She shared on Instagram how to make the dough tender and the filling juicy.
Ingredients for the dough:
- Flour - 420 g
- Water - 150 ml
- Pressed yeast - 18 g (or 6 g of dry yeast)
- Sugar - 2 tsp
- Salt - 1 tsp
- Egg - 1 pc
- Greek yogurt - 50 gr
- Oil - 25 ml
Ingredients for the filling:
- Minced meat - 500 gr
- Bell pepper - 1 pc
- Onion - 1 pc
- Tomatoes - 1-2 pcs
- Butter - 20 gr
- Dry garlic - 1 tsp
- Salt
- Pepper
- Parsley - a bunch
Method of preparation:
1. Prepare the filling: dice the onion and fry in oil until transparent, then add the minced meat and water, mash the lumps, and simmer for 10-15 minutes over medium heat.
2. Next, add diced pepper, tomatoes, dry garlic, salt, and pepper to the minced meat. Stir, simmer for 15 minutes, and add parsley. Set aside to cool.
3. Prepare the dough. Pour warm water, yeast, sugar, and salt into a deep bowl. Stir the dough. Pour in the yogurt, oil, and egg and mix again. Pour in the sifted flour, knead the dough, first in a bowl, then transfer it to a surface (grease it and your hands with oil), and knead for 5 minutes.
4. Put the dough into a bowl greased with oil, cover and send it to a warm place for 40 minutes.
5. When the dough is well risen, put it on a table, divide it into 6 equal parts, cover, and let it rest for 10 minutes.
6. Roll out the dough lengthwise, 30 cm long, and place on a baking sheet. Put the filling and grated cheese on top of the dough and form boats.
7. Grease the sides of the dough with an egg + 1 tbsp of milk and put it in a preheated 230-degree oven, bake for 15 minutes.
