How to stuff eggplants deliciously: an idea for a simple appetizer

In the fall, there are quite a few vegetables that can be used to make healthy dishes. And eggplant is one of them. This product is ideal for baking and goes well with many foods. Therefore, the filling can be quite simple.
The idea of cooking baked stuffed eggplant was published on the Instagram page of food blogger Yuliia juulscooking.
Ingredients:
- eggplant
- onion
- eggs – 2 pcs
- mushroom seasoning
- sour cream – 2 tbsp
- salt
- hard cheese
Method of preparation:
1. Remove the center from the eggplant. Dice the eggplant. Sprinkle all the eggplants generously with salt and leave for 20 minutes to remove the bitterness. Rinse with water.
2. Fry the finely chopped onion.
3. Beat the eggs separately, add the mushroom seasoning and eggplant. Fry together with the onion, then add the sour cream and mix.
4. Brush the eggplant skin with sunflower oil and bake for 20 minutes in a 200-degree oven. Then add the filling and bake for another 20 minutes.
