How to store potatoes at home so they don't turn green and sprout
If you don't store potatoes properly, they can sprout and turn green. As you may have noticed, this common vegetable is sold outdoors, not out of the refrigerator.
As the Express reports, that's why it's kept in cupboards or dark places at home. However, new research has shown that potatoes can be safely stored in the refrigerator for up to six months. Statistically, potatoes are the number one vegetable for generating food waste.
Initially, potatoes were not stored in the refrigerator because of concerns about increased levels of acrylamide. It is a chemical that forms in starchy foods, and exposure to it can increase the risk of several types of cancer.
But the Committee on Toxicity of Chemicals in Food, Consumer Products and the Environment looked at the way potatoes are stored and found that keeping this vegetable in the refrigerator not only does not increase acrylamide levels, but also extends its shelf life. In a cool, dark place, it can be stored for up to several months. But if you store potatoes in the refrigerator, they can be stored three times longer - more than six months.
