Potato croquettes according to Anna Stankevych's recipe, which she shared on her Instagram page

Ingredients:

  • Potatoes - 600 g
  • Eggs - 4 pcs.
  • Flour - 540 g
  • Hard cheese - 100 g
  • Breadcrumbs - 1 p
  • Vegetable oil
  • Nutmeg, herbs, salt, pepper

Method of preparation:

  1. Peel, chop, and boil the potatoes in salted water until tender. Drain the potatoes, mash them, and let them cool.
  2. Chop the herbs. Grate hard cheese on a medium grater.
  3. Add 1 egg, herbs, grated cheese, and nutmeg to the mashed potatoes. Season with salt and pepper.
  4. Mix in 3 eggs. Put flour and breadcrumbs in a separate bowl.
  5. Form small balls. Roll each ball in flour, then in egg, then in breadcrumbs. The last two processes should be repeated twice – for a good crust and to prevent the croquettes from cracking during frying.
  6. Pour oil into a cauldron/fryer/small saucepan/deep frying pan/sauté pan and let it heat up well. Fry the croquettes until golden brown.
  7. Put them on a napkin or colander to drain the excess oil.
