If the meat is still overcooked, cut it into small pieces, put it in a bowl, and cover it with onions. Put the tomatoes on top, drizzle with oil, and sprinkle with lemon juice and salt. The meat will become juicy and tender.

Ingredients:

  • pork ham - 1.5 kg
  • olive oil - 4 tbsp
  • dry red wine - 80 ml
  • spice mix - 3 tbsp
  • salt - 2 tsp

Method of preparation:

  1. Wash the meat and wipe it with a dry napkin.
  2. Cut into random pieces.
  3. Mix oil, wine and spices.
  4. Lubricate the meat with this mixture.
  5. Tighten with a special net and leave to marinate in the refrigerator for 20-24 hours.
  6. Put in a baking dish and bake  under a lid at 250 degrees for 15 minutes.
  7. Turn the meat over and cook for another 15 minutes.
  8. Reduce the temperature to 200 degrees and continue baking for 30 minutes on each side.
  9. Then remove the lid and cook for another 15 minutes on both sides to form a crust.
