Salting red fish at home is easy. And it's no less convenient because you can always adjust the flavor and saltiness to suit yourself and your preferences. Perhaps everyone has tried the traditional salt and sugar recipe. But citrus fruits give the fish a more savory flavor.

Salmon with lemon, orange, and cognac
Ingredients:
- salmon fillet - 1 kg
- salt - 6 tbsp
- sugar - 3 tbsp
- orange zest - 2 pcs.
- lemon zest - 2 pcs.
- juice of 1 orange
- cognac - 2 tbsp.
Method of preparation:
1. Grate citrus zest on a fine grater.
2. Mix with salt. Put most of the mass into a deep container.
3. Put the salmon and sprinkle with the rest of the salt.
4. Mix the orange juice with the cognac and pour over the fish.
5. Put in the refrigerator for one day. Then rinse under running water and dry with a paper towel. Store in an airtight container.
Salmon with lemon and grapefruit
Ingredients:
- salmon - 700 g
- salt - 3 tbsp
- sugar - 1.5 tbsp
- grapefruit - 1 pc.
- lemon - 0.5 pcs.
Method of preparation:
1. Cut the citrus fruits into small pieces and place them on a plate.
2. Mix salt and sugar. Rub the salmon with the resulting mass and sprinkle with citrus.
3. Put in the refrigerator for one day. Then rinse under running water and dry with a paper towel. Store in an airtight container.
