How to remove bitterness from liver besides milk: a universal and budget-friendly way
Liver is not only affordable but also very tasty and nutritious. But this product has a specific bitterness. Boiling water will help to get rid of it. The liver will become soft and juicy, and you can use it to make a versatile gravy for any side dish.
The idea of cooking liver gravy as a side dish was published on the Instagram page of food blogger Viktoriia with the nickname cook_with_me_at_home.
Ingredients:
- liver – 500 g
- onion – 4 pcs
- oil
- garlic – 2 cloves
- sour cream – 6 tbsp
- mustard – 2 tsp
- spices: sugar, salt, pepper, favorite – to taste
Method of preparation:
1. Cut the washed and peeled liver into portions and cover with boiling water for 2-3 minutes. You can use any liver. If you pour boiling water over the product, the unpleasant odor will disappear and the texture will be soft.
2. Peel and cut the onion into thin half rings, and fry in a little oil over medium heat. You should get a soft, stewed onion.
3. Add 1/2 tsp of sugar and a pinch of salt somewhere in the middle of the process.
4. When the onion begins to brown, add finely chopped garlic and fry, stirring. After 1 minute, add the liver, salt, and pepper to taste and reduce the heat.
5. Simmer for 3 minutes, covered with a lid.
6. For the sauce, mix mustard and sour cream. If you have thick, homemade sour cream, you can add a little water. Pour the sauce over the liver, stir, and simmer under the lid for about 10 minutes, stirring from time to time and adding water to the desired thickness.
7. Serve with any side dish.
