The idea of preparing lightly salted red fish for sandwiches was published on the Instagram page of food blogger Kateryna Movchan. The product is moderately spicy and very tender.

Ingredients:

  • raw salmon - 350 g
  • sugar - 35 g
  • salt - 35 g
  • water - 500 ml
  • bay leaves - 3 pcs.
  • black pepper - 15 pcs.
  • allspice - 3 pcs.

1. For brine, pour water into the pan.

2. Add salt, sugar, peppers and bay leaves.

3. Stir until sugar and salt are completely dissolved, bring to a boil.

4. Then turn off the heat and cool the brine completely.

5. Put the fish in a container (or other convenient container) skin side down and pour the brine over it.

6. Close the container with a lid and refrigerate for at least 12 hours (up to a day and a half). Be guided by the degree of the desired flavor.

7. Then take the fish out of the brine, wipe it with a paper towel, and you can eat it.
