How to quickly cook zucchini pancakes with herbs: a simple recipe
As soon as the zucchini season begins, every housewife must make zucchini pancakes at least once. The process of preparing this dish is as simple as possible, the only thing is that you need to squeeze the zucchini out of excess moisture beforehand, which takes a little time. However, you don't have to do this if you know some tricks.
Food blogger Victoria (kelbas_v) shared a recipe for quick zucchini pancakes on her Instagram page.
Ingredients:
- zucchini - 2 pcs
- eggs - 1 pc
- dill - 1/2 bunch
- onion - 1 pc
- flour - 8-10 tbsp
- salt - 1/2 tsp.
Method of preparation:
1. Grate the zucchini on a coarse grater.
2. Chop the dill and onion.
3. Mix zucchini, dill, onion and egg. Add flour as well.
4. Finally, add salt and mix the batter quickly. Important: in order to prevent the zucchini from juicing, they need to be fried quickly. Thus, you need to spoon the mixture on a frying pan at the stage of grating the vegetables.
5. Fry for 2 minutes on each side.
