How to properly dry tomatoes: recipe from Héctor Jiménez-Bravo

Sun-dried tomatoes are the best addition to salads, pasta, potatoes. In general, they can be added to any dish you like. It is very important to prepare the tomatoes correctly and dry them properly.

Hector Jimenez-Bravo shared on Instagram a recipe and tips on how to properly prepare sun-dried tomatoes.

Ingredients:

  • Cherry tomatoes
  • Dried garlic
  • Thyme or other aromatic herbs
  • Olive oil
  • Fresh garlic
  • Salt

For the filling:

  • Olive oil
  • Cilantro or other herbs
  • Fresh garlic
  • Salt

Method of preparation:

1. Cut tomatoes in half and place on a foil-lined baking tray.

2. Peel the garlic, cut into slices and put it on top of the tomatoes. Sprinkle with aromatic herbs, dried garlic, salt and drizzle with vegetable oil.

3. Dry for 9 hours at 100C on the top/bottom setting without convection. Periodically open the oven door to allow condensation to form.

4. In a jar put chopped herbs, garlic and salt, after a layer of cooked tomatoes, then add spices and pour oil. Send to the refrigerator for a few hours!
