How to preserve gooseberries for the winter: recipe for 'Mojito' compote with lemon and mint

Gooseberry compote has become increasingly popular in recent years. Combined with mint and lemon, the drink is very fresh, rich and pleasant to the taste, a real hit of the winter season. In addition, the usual ingredients can be easily replaced: mint with basil, and lemon with other citrus fruits.

Food blogger Lilia (lileklilek2) shareda recipe for 'Mojito' gooseberry compote on her Instagram page.

Ingredients for a two-liter jar:

  • gooseberries - 500 g
  • mint - 2 sprigs
  • lemon - a few slices
  • sugar - 150 g

Method of preparation:

1. Wash the jars and lids beforehand. Pour a little boiling water into the jar and leave it to cool to a warm state.

2. Then drain the water. Pour gooseberries, mint, lemon and sugar into the jar. Pour boiling water over them.

3. Close with the lids. Turn upside down to dissolve the sugar.

4. Cover the jars with something warm and leave them upside down for about two days. When cooled, the compote can be stored at room temperature.
