How to preserve cherries in their own juice: for pies, dumplings, cakes and compotes

The cherry season will soon be in full swing. This juicy, sour berry is ideal for making a variety of compotes and fillings. And if you want to prepare for the winter, the best option is to cook cherries in their juice. In this form, it retains maximum flavor.

Food blogger Svitlana (bonappetit.ssm) shared a simple technology for cooking cherries in their own juice on her Instagram page.

Ingredients:

  • pitted cherries - 1 kg
  • sugar - 700 g

Method of preparation:

1. Remove the pits from the cherries.

2. Pour them with sugar in the proportion of 1 kg of cherries 700 g of sugar.

3. Leave overnight or longer.

4. Drain the juice and boil it.

5. Pour the hot juice over the cherries. Do this two or three times.

6. Put the cherries with juice in sterilized jars.

7. Sterilize half-liter jars for 10 minutes and close the lid.

8. These cherries can be added to donuts, cakes, pies, and muffins. Do not pour out the juice – it makes a delicious compote.
