How to prepare zucchini caviar for winter: you won't be able to tell the difference from store-bought caviar
Zucchini preserves are one of the most popular and delicious. For example, everyone's favorite zucchini caviar, which can be eaten as an independent, and addition to main dishes, and as a spread on bread.

Ingredients:
- zucchini - 3 kg
- carrots - 1.5 kg
- onion - 750 g
- vegetable oil - 350 ml
- tomato paste - 350 ml
- sugar - 150
- salt - 60 g
- water - 180 ml
Method of preparation:
1. Peel zucchini from the skin and seeds, if they have already formed. Cut the vegetables into cubes.
2. Dice the onion.
3. grate the carrots.
4. Mix the vegetables and pour water over them. Put on the fire and bring to a boil, then cook for 40 minutes. Remove from heat and let cool slightly.
5. Chop the mass with a blender to the state of puree.
6. Add tomato paste, salt, sugar and vegetable oil. Stir and put on the fire. Bring to a boil and cook for 15 minutes.
7. Put the caviar into sterile jars.
