Everything is perfect in cabbage soup: rich broth with a slight smoked flavor, tender vegetables, flavorful herbs, and juicy young cabbage. It is important not to forget about the roast during the cooking process as it gives the soup a special tenderness.

Recipe for young cabbage soup

Ingredients:

  • smoked bacon/ham - 200 g
  • onion - 1 pc
  • potatoes - 5 pcs
  • carrots - 1 pc
  • water/broth - 1.5 litres

  • young cabbage - 1/2 heads
  • 30% cream/sour cream - 200 ml
  • dill - 1 bunch
  • butter/vegetable oil - 50 ml
  • salt

How to cook:

1. Heat butter in a heavy-bottomed saucepan. Add bacon or ham. Simmer until it starts to brown.

2. Chop and add the onion. Cook until the vegetable is soft.

3. Meanwhile, grate and add carrots. Simmer for 5 minutes.

4. Cut the potatoes. Add them to the vegetables with the broth. Cook over medium heat until the potatoes are tender.

5. Meanwhile, chop the young cabbage. Add it when the broth is ready. Bring to a boil.

6. Pour cream or sour cream and bring to a boil again. Remove from heat and add chopped dill. Leave the soup for 5 minutes and serve.
